This winter I was supposed to be enjoying a week on the beach in Hawaii. My birthday is coming up and it’s a biggie… and all I wanted was to bury my feet in the sand while sipping a pina colada and listening to the waves crashing against the shore. So, obviously, this isn’t happening this year. Never mind that I live about an hour from the beach… I don’t want a California beach. I wanted a Hawaiian beach. And I guess I could always listen to those white noise CD’s that sound like waves crashing against the short… kind of a sad alternative. So, I might not be able to have the waves and the beach, but I can still make myself a pina colada to enjoy.
I tend to like my drinks frozen and frothy… kind of like a pin colada is anyway, but without the alcohol. Not that I have anything against alcohol, but usually when I’m making drinks during the holidays, my kids are going to want them too… so I go the virgin route and make them without. We are smoothie lovers in my house, but we usually make them with only fruit because I don’t do well with dairy. I love a good milkshake… but they definitely don’t love me. The thing with pina coladas is that you WANT them rich and creamy and it’s hard to get that consistency without adding any dairy. Bingo… that’s where Silk Dairy-Free Yogurt comes in.
My husband eats yogurt every single day (really!) and I’ll eat it on occasion, but the Silk Dairy-Free Yogurt is the perfect every day yogurt for your life because it tastes amazing and won’t upset your stomach. I picked some up on my weekly Walmart run and as soon as I saw the pineapple flavor I thought I should try using it to make pina coladas.

Silk Dairy-Free Yogurt can be found in the yogurt section of Walmart and comes in a variety of flavors, including the Tropical Pineapple that caught my attention. No cholesterol, no dairy, no artificial flavors or colors, gluten-free… what’s not to love?
Let’s make a smoothie!
Ingredients:
1 container Silk Dairy-Free Yogurt, Tropical Pineapple (Frozen)
3/4 cup of Silk Coconut Milk
That’s it… really! Pop a few of the tropical pineapple flavor in the freezer. Unlike some dairy yogurts, this freezes very well. Like… solid frozen. When I took it out of the freezer, I submerged the bottom in hot water for a few minutes just to release the bottom and make it easier to get out of the container.
I broke the frozen yogurt up a little bit to make it easy to blend and put it in my blender with the 3/4 cup coconut milk.
I really love fresh pineapple and I’m fortunate to be able to get it pretty much all year long so I used it as a garnish. It really adds to the tropical feel.
It takes minutes to make and it fills you up… without the tummy problems that come with dairy. I could drink this every morning… and it’s the perfect (and easy) breakfast smoothie for holiday mornings. Can’t you just picture making a batch of these for everyone on Christmas morning?

- 1 container of SILK Dairy Free Tropical Pineapple Yogurt
- 3/4 cup SILK Coconut Milk
- Freeze container of pineapple yogurt overnight.
- Chop up yogurt to make smaller pieces and add to blender.
- Add 3/4 cup of coconut milk and blend together until smooth.
- Serve with pineapple garnish (optional).





Yum! This looks delicious and on these cold nights would be a great distraction!
